    this book was very detailed.only thing i did not like is because it was paper back but other than that it had a lot of information about diffrent knifes.

    This book quite good or so dare I say. I was educated on several aspects of cooking and cutting that I took for granted and was unaware off. It gives you just enough information to be dangerous. In truth, it is a fun book and it has helped me prepare some clever dishes. This book was given to me as a gift and it definitely is cool to be sure.

    Although there is a lot of great information in the book, about 90-95% of it is straight out of “The Professional Chef.” For another $20 or so, buy it instead. You get the same knife-handling info, and a ton more.
    This book should sell for [less].

    This is a great book for a home chef, particularly for a home chef who is finally investing in some good knives and wants to learn some basic skills. I like the way this book shows everything from caring to knives to history and safety, as well as to how to go about chopping, dicing, cutting and slicing. The photographs are very instructional, covering everything from vegetables, meat and even garnishes.
