What’s a nice simple vegetarian recipe for someone who’s picky?
I’m a vegetarian, but I’m pretty picky when it comes to food. I want to make something for a friend of mine this Saturday, so I’m curious if someone knows any recipes that don’t have tons of weird stuff in it.

I can give you some ideas for recipes then you look for them online. Not sure if you’re looking for an entree or appetizer though, so here’s a little of each. There are a bunch of sites if you just put in what you’re looking for.
Fried Breaded Eggplant
Bruscetta
if you’re ok with cheese, then maybe a broccoli and cheese casserole?

spring rolls
lettuce wraps–those chinese kind like at PF Changs

fruit salad or fruit skewers

well i have been a vegetarian for almost 12 years. most of my friends and family aren’t. but i am a very picky eater. now that i’m pregnant i need to eat healthier. one of my favorite recipes are hot veggie pasta.
what your need;
any kind of noodle (not spagetti)
broccoli
cauliflower
carrots
garlic
veggie cheese
boil the noodles
saute all the veggies
add whatever seasoning you like
mixe together
add cheese
it tastes amazing and is easy to make

Vegetarian lasagna is in my opinion is one of the best vegetarian dishes. I fix it even when my friends and family come over that are not vegetarian and they all love it.
Spicy Mexican Bean Patties
These are really yummy, even my non veggie friends like them. I melt some cheese over them and serve a couple patties with some salsa to dip them in. Green beans are an excellent side. You can make these and freeze them for later.
This is the original recipe, although I prefer to add some jalapenos and make the salsa hot to spice things up.
Yield: 8 servings
16 oz canned red kidney beans (drained and rinse)
1/2 sm onion coarsely chopped
1/2 green pepper coarsely chopped
1 carrot, steamed & mashed (you can use a can, they are already soft)
1/8 cup picante sauce or salsa
1 cup bread crumbs
1/2 cup flour
1 ts black pepper
Dash of chili powder
Mix all ingredients together. (Add flour to thicken, salsa to thin). Form into balls and smash into patties.
Bake at 450 degrees for 15-20 minutes until firm and brown. Can also be grilled or pressed in a sandwich press.
Hi Spiff, I suggest the morningstar veggie patty burger with lettuce, tomato, olives, pickles, and an organic dressing. It’s good with some potato wedges and organic soda or seltzer.

Salad with everything in it plus Balsamic Vinegar and sunflowers seeds with…
Soup or broccoli potato on the side
OR
Put some vegetable oil in a pan and brown broken up tofu chunks until all sides are browned. Serve it with brown or white rice and vegetables with some good dressing like balsamic vinegar or soy sauce.
